Here is an EASY recipe for a roast that I use when I want to serve something
really good, but would rather spend time knitting. I usually make it on Sundaýs
and
spend the time it is cooking doing my knitting. The aroma will drive you crazy
2 12-oz jars Heinz Savory Beef gravy
twelve ounces dry red wine (merlot, cabernet, malbec,montepulciano or beaujolis
work well and the wine doesn't have to be expensive, just anything dry. I
often use Sutter Home or Concha y Tora) Use wine to swish around the jars
to get the last of the gravy
couple of pinches of dried rosemary
2-5 pound chuck roast (I buy boneless and somewhat lean)
Preheat oven to 350 degrees
Mix all ingredients except roast in a pyrex dish (or corning) that can be
covered. To release rosemary
essence, crumble. Mix all well and then submerge the roast. Cover and cook
for an hour until heated
through. reduce time to 300 degrees and continuecooking for another 2-4 hours,
stirring only occasionally. Roast is done when tender and
practically falling apart.
I usually serve with boiled red potatoes (boil small red potatoes about 10
min covered) and steamed or microwave broccoli (7 to
10 minutes, cooks pretty fast!).
While this easy roast is cooking, make sure you do your knitting. That is
the point of making this roast!
