Yields 3 Lbs.
2 C. butter..do not use margarine, this is a 1 lb. pkg. of butter
2 C. sugar
2 C. finely chopped almonds, use a blender or food processor to chop..
1 16 oz. bag of semi sweet chocolate chips
1 16 oz. bag of milk chocolate chips
Grease two 11x 14 inch cookie sheets with a lip on the edge, the toffeespreads
out.
In a tall saucepan heat butter over low heat until melted. Stir in the sugarand
now cook over medium high heat until it is boiling. Stirring constantly with
a wooden spoon. This step will take approx. 5-6 minutes.
Clip a candy thermometer to the side of the pan. Continue to stir this but be careful not to splatter otherwise--you could get burned. Let this mixture cook until thermometer reads 300 degrees.
Pour into cookie sheets, being sure to divide evenly between cookie sheets. Let cool for about 5-6 minutes.
Melt half of each bag of chips in a microwavable bowl. Cook in the microwave 30 second intervals, after each interval try to stir the chips. The chips will need to be stirred until completely melted. It takes about minute forty in my microwave.
Spread melted chocolate over the sheets of toffee. Now sprinkle the chopped almonds over the chocolate. Press the nuts into the toffee--so the nuts stick well. Put the sheets in the fridge to firm up--about 10-15 minutes.
Melt the remainder of the 2 bags of chocolate chips.
Take toffee out of the fridge, flip it to the plain side & pour the melted chocolate over the toffee. Press the nuts into the toffee & let it cool in the fridge again.
Break into bite size pieces. Store in a covered container, in a cool place.
I store mine in the fridge. Yields about 3 pounds, approximately 90-100 pieces.
This is my dad, Ken's favorite treat at Christmas. I make this toffee every
year for friends & family. Any type of chocolate could be used..semi sweet,white
or all milk chocolate. I prefer to blend the semi sweet & milk chocolate
together. Any type of chopped nut can be substituted for the almonds. I have
made it with white chocolate & chopped macadamia nuts---it was quite good.
I have found nuts to be cheaper at Sam's Club, a grocery warehouse.
