Ingredients:
4 eggs
1 1/4 cups sugar
2 1/2 cups flour
2 teaspoons anise seeds
1 cup walnuts, coarsely chopped
Method:
Place eggs and sugar in bowl and beat well 10 minutes (beat 'til they
are lemon yellow and thick). Add flour blending gently. Add anise seeds
and walnuts. Butter and flour loaf pans 4 inches wide. (I use 10" long
loaf bread pans (2) for this recipe. Pour batter in pans (it shouldn't
be more than 1" of batter in pan) and bake in moderate (375 F.) for 20-30
minutes.
Remove from pans, leaving oven on, cut loaf into 1-inch slices and place slices on buttered baking sheet. Place in oven and brown slices first on one side and then on the other. Browning will take about 5 minutes for each side. Makes about 40 biscuits.
If you've ever seen "Biscotti" you'll know what these should look like. They are wonderful dipped in coffee. They don't last very long in my house. You could substitute the anise seeds for almond extract and the walnuts for almonds if you wish. You could also dip the ends (or one end) in a chocolate coating (the almond flavored biscotti). These are much less work than regular cookies, and I think, better!!
