Chocolate Muffins

Ingredients:
1 2/3 cup flour
3/4 cup sugar
1/3 cup unsweetened cocoa powder
3 1/2 tsp baking powder
1/2 tsp salt
1 egg
1 cup milk
1/4 cup oil
1 tsp vanilla
1/2 cup nuts or chocolate chips (optional)

Method:
In medium bowl, combine flour, sugar, cocoa, baking powder and salt (nuts or chips optional).

In smaller bowl, lightly beat egg, add milk, oil and vanilla.

Pour liquid ingredients over dry and stir just until moistened (batter will be lumpy).

Spoon batter in 12 greased muffin cups.

Bake in preheated 400F oven 18 to 20 minutes or until firm to the touch.

Cool in pan on wire rack for 5 minutes; remove muffins and cool on rack.

Makes 12 muffins.
