King of Coconut Cake

Ingredients:
2 c. sugar
2 eggs
1 c. hot coffee
3 c. plain flour
1 c. oil
3/4 c. cocoa
1 t. vanilla
1/2 t. salt
2 t. baking powder
1 c. buttermilk
1 c. chopped walnuts or pecans

Method:
In mixing bowl, combine sugar, oil and eggs. Beat one minute at high speed; add remaining ingredients except nuts. Beat 3 minutes at medium speed. Fold in nuts with spoon.

Filling
1 c. sugar
1/2 c. coconut
2 t. vanilla
1/4 c. to 1 (6 oz.) Pkg. Chocolate chips, according to taste
2 x 8 oz. Cream cheese, softened (not Fat Free)

Pour half of batter in tube pan; add filling. Add other half of batter. Bake @ 350 deg. For 1 to 1- 1/4 hours. Let cake cool before cutting.
