Ingredients:
1 stick butter, softened
1/2 cup brown sugar
1 tablespoon fresh ginger, peeled and minced fine
1 tsp vanilla
1 tablespoon ground ginger
1 1/4 cup flour
1/4 tsp baking soda
Pinch salt
Method:
Cream together butter and sugar, and vanilla and fresh ginger.
Mix dry ingredients.
Gently mix dry ingredients with wet just until the are combined.
Roll into a log about 2 inches across and chill for a couple hours or freeze until ready to bake.
LOWER FAT VERSION - replace some or all of butter with pureed prunes (prune baby food works great). Usually I use applesauce to replace fat, but it's not smooth enough for this recipe.
Heat oven to 350 degrees.
Slice log into 1/4 inch slices. Bake until lightly brown and cool on
a rack.
Crisp on the edges and chewy in middle. Yum. <grin>
