This is an old Hungarian recipe for cabbage noodles. I know: it sounds awful. Trust me; this is delicious. Just don't tell the kids that it has cabbage until after they gobble it down.
Ingredients:
1 head of cabbage
1 pkg broad noodles, broken into squares
A little oil, olive, corn, etc. or butter if you prefer
Method:
Chop up or grate the cabbage. I use the food processor with the metal
S blade and chop up a chunk at a time. Place the cabbage in a colander,
and sprinkle with about 2 TB salt. The exact amount isn't important; you
just want the cabbage to drain away excess liquid.
Let sit for about 1/2 hour, and then squeeze the liquid out of the cabbage.
Heat up your cooking fat. You need only enough to cover the bottom of the frying pan. Dump in the cabbage and fry on low-medium heat until it browns all over. Don't burn it. As it fries, it changes from tasting cabbagy to sweet.
Cook noodles and drain. Dump the cooked cabbage over the noodles and
mix well. That's it. Sounds gruesome, looks brown, and tastes divine.
