Louisiana Beans and Rice

Ingredients:
1 tablespoon vegetable oil
1 cup chopped onion
1 large green pepper, chopped
2 cloves garlic, minced - I add more ;-)
1/2 teaspoon dried thyme leaves crushed
1/4 teaspoon dried oregano leaves crushed
2 cans (16oz.) each red beans - I use one each light and dark red
1 can (10 & 3/4oz) Campbell's Condensed Tomato Soup
1 cup smoked sausage - cut up however you want I usually end up with one of those pound packages from Hillshire
1/4 teaspoon ground red pepper (cayenne) -- I use a bit more ;-)
Hot cooked rice - whatever variety you like

Method:
To Microwave (see it is quick, too)
In 2 quart microwave safe casserole, combine oil, onion, green pepper, garlic, thyme, oregano.

Cover w/lid (I plastic wrap it); microwave on high 5 minutes or until vegetables start to become tender. Stirring once during cooking.

Stir in the beans, tomato soup, sausage, & red pepper.
Cover; microwave high for 5 minutes or until hot. Stir.

Reduce power to 50%. Cover; microwave 15 minutes or until flavors are blended.

Serve over or w/ rice.

Makes about 5 cups or 5 servings. (With the rice you can stretch it)
