Nacho Cheese Soup

This is great for knitters gatherings - you can put it in the crock pot & forget it for 6-8 hours. Simple to prepare, therefore leaves more time for knitting! You can also make it on the stove top in about half an hour if you get unexpected guests.

Ingredients:
1lb. ground beef
2 cloves garlic, chopped
16 oz. salsa or taco sauce
4 cups beef broth
1 tsp. ground cumin
1 15 oz. can kidney, black or pinto beans
2 10.5 oz. cans condensed Cheddar Cheese Soup

Garnish: sour cream, chopped green onions

Method:
Brown beef & garlic, drain fat. Put in crock pot with remaining ingredients except Cheese Soup. Stir thoroughly & cook on low for 6-8 hours. At about one hour before serving time, stir in cheese soup & turn to high. Serve with sour cream & green onions if desired. May be made
with ground turkey or pork sausage instead of beef, or leave meat out. Spiciness level can be adjusted by the kind of salsa you use.
