Ingredients:
1 8oz. pkg. cream cheese, softened (the Light kind works fine, fat-free
not so good)
1 16 oz. can red salmon, drained & cleaned of bones & skin
2 tsp. grated onion
1 tsp. horseradish
1 T. lemon juice
1/4 tsp. liquid smoke (Important ... don't leave this out)
1/2 C. finely chopped fresh parsley, optional
1/2 C. chopped pecans, optional
Method:
With mixer, combine cream cheese & salmon until smooth. Add onion,
horseradish, lemon juice, & liquid smoke. Stir to combine. Cover &
chill for several hours.
If desired, spread chopped parsley & pecans out onto a large sheet of plastic wrap or waxed paper. Turn chilled salmon mixture out onto it. Turn & roll salmon mixture until covered with parsley & pecans. Put on pretty serving dish. Serve with crackers or Melba toast rounds. My family thinks Triscuits are the best.
